Cake for birthday has become a norm to the extent that if you tell anyone today is your birthday, he or she smiles and reply...hope my cake will be kept for me 'cos am coming o!. If you are a Nigerian you will relate easily to this instance. Well everybody around the globe do know that birthday without cake nowadays is somehow not complete. Birthday cake is one of the thing you need to make a birthday special. These easy homemade cake recipe will be a hit at any birthday party.



26 December was hubby's birthday and so going with the trend thought I have to prepare a birthday cake for him and also some dishes to celebrate with him and the kids. Although previously I do bake cake but not with so much care, sometimes I don't even coat it but this time it has to be special for a special person. *winks*

So all the ingredients needed was bought from the market and I made a cake, prepared a goat meat pepper soup, rice and stew and a cabbage salad. Below are the ingredients and method of preparation.

Ingredients For A Birthday Cake

1 Flour
egg
baking powder
preservative
flavour
nutmeg
colour(browning)
butter
sugar and
mix fruit

Method Of Preparation

Mix one satchet of butter with 5 to 6 table spoon full of sugar till it's properly mixed.

Then get about 8-10 eggs, break into a bowel and beat very well, then pour into the mixture of butter and sugar and mix together.

Then get 2 cups of flour and be addimg it gradually as you stir.

Then add a little drop of liquid browing (colour), add also onetablespoon full of preservative, 2 -3 drops of vanilla flavour, one nut of grinded nutmeg, half tea spoon of baking powder and finally add the mix-fruit. Mix all together properly.

Note: Remember to soak the mix-fruit in water over night to enable it get softer

Finally grease the cake pan with either butter or groundnut oil and pour the mixture into the greased pan and bake for about 30 to 40 munites and it's ready for coating after it has cold.



Coating A Cake



In the coating process you either go with butter icing or fondant coating

Butter Icing Ingredients

4 cups of powdered sugar (or 1 box)
1 Cup (2 sticks) of softened butter
2-3 teaspoons of vanilla
1-2 tablespoons of milk


Method Of Preparation

Add powdered sugar to mixing bowl. 
Add softened sticks of butter.
Add vanilla.
Add 1 tbsp of milk.
Beat on low until powdered sugar is incorporated.
Then move mixer up to medium-high speed.
Scrape sides and bottom of bowl often.
When completely mixed the frosting may appear dry.
Add more milk, a little bit at a time until frosting is the proper consistency.
The use either knife to knead it on the cake, add food coloring for designing the cake.


Fondant Icing Ingredients

7 cup icing sugar sifted
1 1/2 tbs glycerine
1/2 cup glucose syrup
1 tbs gelatine powder
1/4 cup cold water
1 tsp vanilla essence


Method Of Preparation

STEP 1: Sift the icing sugar into a large non-metal bowl and then make a well in the centre.

STEP 2: In a small saucepan, add water and gelatine. Over a low heat, dissolve the gelatine. Do not let it boil.

STEP 3: Remove saucepan from the heat and add the glycerine and glucose syrup. Stir until combined well, then add vanilla essence.

STEP 4: Pour the gelatine mixture into the well in the icing sugar.

STEP 5: Mix until all of the icing sugar is combined with the mixture. Knead the icing until it is well combined and smooth.

Notes

Add extra sifted icing sugar in small amounts if the mixture becomes sticky while kneading. Wrap in 2-3 layers of glad wrap for 6-8 hours before using for best results.


After preparing the rice and stew the next thing I did was to get the cabbage salad ready.

How To Prepare Cabbage Salad

Ingredients:
Cabbage
Lettuce
Green beans
Green pepper
carrot
Irish
potatoes
Fresh tomatoes
White Onion
Cucumber
Fresh egg
Beaked Beans and
Salad Cream

Method Of Preparation

Wash one sizeable cabbage with warm water and slice into a bowl.

Wash the lettuce with warm water and slice as well.

wash one cucumber with cold water slice open to remove seed then slice into little bits.

Wash the carrot about 5 with warm water and scrip the bac with knife and slice into bits.

Wash the green beans about N20.00 worth in cold water, cut into small sizes and steam/cook for about 10 munites with the pilled Irish potatoes about 2 to 3 seeds. Then slice the potatoes into small sizes.

Wash the green pepper about 2 with warm water and slice into little bits after removing the seeds.

Wash the tomatoes (strong ones) about 5 to 7 in cold water and slice in circle form.

Boil about 4 to 5 eggs for about 5 minutes. Allow to cool then remove the shell and slice in circle form.


Get a bowl and start putting the sliced ingredients gradually one after the other including the baked beans which you just opened and use spoon to take it gradually until all have entered the bowl in sets.

Then serve by dishing it from one angle add little salad cream to each of the quantity you want to dish out.


The final dish was goat meat pepper soup

Goat Meat Pepper Soup


INGREDIENTS                                                       QUANTITIES


Goat Meat                                                                   6small pieces

Onion (ground)                                                           1 tablespoon

Dry Pepper (ground)                                                   1 tablespoon

African Nutmeg (ground)                                           1 teaspoon

Effirin/Nchanwu/Ntong                                             20leaves

Maggi Crayfish                                                           2 tablets

Water                                                                         2litres

Salt                                                                             Totaste


Method Of Preparation

Wash the meat thoroughly (already cut fromthe market).

Season with onion, salt and a teaspoon ofpepper.

Steam till the water is almost driedup.

Add the 2 litres of water stir and add theground Nutmeg, the remaining pepper and the Maggi Crayfish.

Cook till meat is tender and the stock isslightly thickened.

Wash and shred the leaves. Add to the boiling sauce.

Stir and add salt to taste.

Simmer for about 10 minutes


Remove from heat and serve hot.
