Jollof rice or just jollof, also called Benachin, is a one-pot rice dish popular in many West African countries.
Jollof Rice is a favorite Nigerian Rice recipe both for family dinners and at parties, If you have ever find yourself in a situation whereby you want to do a mini party probably for your kids birthday but you don't know how to go about it since it will definitely be double of the normal amount of what you usually cook for the family alone, then don't worry, this recipe could help you and you too can prepare this popular rice recipe.
INGREDIENTS FOR HALF BAG Of RICE
1.)tomato1/3 basket(that is dividing 1 basket of tomato into 3)
2.) 2 big tin of tin tomato.
3.) 1 and 1/2 packet of maggi
4.) 1 big pack of curry( not that u will use all the curry. But you will use more than half of it)
5.)Onion #700 (#700 onion is more then enough because onion is very cheap now)
6.)Ginger and garlic fresh #400.
7.) nut meg ( about 6 sachet is enough).
8)shombo 1 custard rubber.
9.) fresh pepper 1 custard rubber( NOTE: u will not use all, but you will use more than half of it.
10.) 10 litres of groundnut oil
SPICES TO BUY:
1.) 1 Roll of kitchen glory
2.) 1 Roll of benny spice.
3.) 1 Roll mevina.
4.) 2 sachet of delice spice.
5.) Thyme, the size sold 350.
6.) 1 sachet of Rose (rosemary)
NOTE: u will blend it.
7.)1 big salt. You may use crayfish if u wish. Buy half custard rubber and blend.
Some people don't use crayfish except they are cooking for the family because they are people that doesn't eat crayfish, remember it's for a party.
METHOD:
Grind your tomato, fresh pepper, shombo, ginger, garlic and enough onion.
Pour your grinded tomato in a pot and set on fire for the water to dry.
YOU CAN DECIDE TO POUND YOUR PEPPER INSTEAD OF GRINDING IT TOGETHER WITH TOMATO. SOME PEOPLE LIKE THE TASTE MORE
Seasoning your meat with part of the spice. Seasoning your meat very well cover and keep for about 30minutes before cooking, in order for the meat to absorb the seasoning. (Don’’t put water in your meat immediate allow it to boil very well before adding enough water).
Fry your meat.
READY TO COOK YOUR JOLLOF NOW:
There are two method to cook jollof rice either by boiling or frying.
Slice your onion,
place your pot on fire,
pour in the groundnut oil you use to fry your meat,
if is not enough add more,
once the oil is hot add sliced onion,
fry for a while and add your tin tomato,
once your tin tomato is fried,
add your tomato and fry.
Add your spices, maggi, salt, kitchen glory, blended rosemary e.t.c But remember not to add too much salt because you will still use your stock/meat water.
Add your stock (the meat water is the stock) taste and add more spices if is not enough,
Cover to boil very well and wash your rice with hot water and pour inside pot use spatula to mix together and cover. ( Never you use spoon to turn your jollof rice) you can even divide the rice into 2 equal part and cook twice. Because half bag of rice is too much to cook in one home pot. Also divide the stew into two and use.
