Cauliflower Rice
Ingredients
1 large head cauliflower, separated into 1-inch florets.
3 tablespoons olive oil. Salt
Directions
- Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.
- Heat olive oil in a skillet over medium heat; add cauliflower 'rice', salt, and pepper. Cover skillet and cook until heated through, 3 to 5 minutes. Remove lid and fluff 'rice' with a fork.

Cauliflower Pizza
Ingredients
1 head cauliflower, (Remove stalk)
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon parsley
Cayenne pepper
2 eggs, beaten
I turkey sausage (jumbo size)
Pizza sauce ( I didn't measure quantity)
Directions
- Preheat the oven to 400 degrees F.
- Cut out the stalk from the cauliflower. If you have a food processor, best! Add and use pulse button and blend a few times till you have the consistency of fine cauli rice.
- If you don't have a food processor, then use your blender. Add some water and use the grate button. Blend till you have the consistency of fine cauli rice!
- On a clean kitchen towel, pour the content and wrap towel around it then squeeze out the water from the cauliflower. You want it as dry as possible.
- In a bowl, combine the dry cauliflower with the beaten eggs, some salt, and grated Parmesan cheese. This is your pizza crust.
- Grease your pizza pan and spread out your cauliflower crust on it, as desired. Apply pizza sauce, parsley, cayenne pepper then sprinkle mozzarella cheese, more cayenne pepper if you like. Add your desired toppings.
- Transfer into heated oven and bake uncovered for 30 minutes. You can bake for 20 minutes but baking for 30 minutes will help get the moisture out.

Almond Crackers
Ingredients
Three 1/4 cups of unblanched almond flour 2 Eggs 2 tablespoon flax meal (optional) 1 1/2 tablespoon melted butter Liquid stevia (optional)
Directions - Mix together all ingredients until dough becomes stiff. - Line a cookie sheet pan with foil. - Spread dough thin into an approximate 8 x 6 inch rectangle by patting dough flat with a spatula. - Using a spatula, cut a grid into the dough to form approximately equal cracker squares. - Bake at 325 degrees F for 10-12 minutes or until golden brown.

Directions - Prepare your cauliflower using the squeeze out water method. - Blend crayfish and pepper with the least amount of water possible, if not, your moi moi will not hold. - Mix all ingredients into the cauli mash. You should get a thick batter. - Pour batter in bowls or wrap with leaves. Steam and enjoy.
Cabbage Fufu
Ingredients: 1 whole Cabbage 1 tablespoon of psyllium husk flakes
Directions
-Chop cabbage and add in a blender.
-Add water to help you blend chopped cabbage into a smoothie/mash
-Pour content into a strainer/sieve with miniature holes to drain excess water. Save this water so that you can reuse it to blend remaining chopped cabbage since you cannot blend all your cabbage at once
-After draining excess water from mashed cabbage, pour cabbage mash into a cooking pan on the stove and stir
-Allow cabbage mash to cook for a while in other to dry out even further
-Then Add 1 tablespoon of psyllium husk flakes. Psyllium husk rises, and you don't need more than 1 tablespoon. I said tablespoon not teaspoon because there is a difference between the two.
-If you like eating stronger fufu, then you can add additional 1 teaspoon of psyllium husk flakes. However, on cooling, the fufu solidifies even more so you may not need additional psyllium husk flakes
-Continue to stir mixture and cook until you get your desired texture.
-Remove from heat and roll into desired shape in a bowl

Ingredients:

-Combine all of the tortilla ingredients together in a small bowl and mix well.
-Allow the batter to sit for approximately 10 minutes to allow the flour to soak up some of the moisture, and then stir again. The consistency should be similar to crepe batter.

- Place cauli rice in bowl
- Add Parmesan cheese, beaten eggs, yeast and parsley and mix.
- Spray baking sheet with some cooking oil
- Place your cauli dough on the baking sheet and spread out into a rectangle shape or any desired shape
- Bake at 375 degree Fahrenheit for 45 minutes or until golden brown
- Enjoy with your favorite chicken, burger, guacamole and so forth

- Add husk
- Continue to stir until husk is well blended with coconut flour
- Remove from heat and roll into desired shape in a bowl
- Serve with your favorite soup

Keto Meat Pie
Ingredients
3/4 cups of almond flour
1 teaspoon psyllium husk flakes
1 teaspoon baking powder
2 eggs
2 tablespoons of butter
1/2 teaspoon of sweetleaf sweetener Or 2 individual packs of stevia
Minced meat( cooked to your taste with seasoning and spices)
Directions
- In a bowl, combine almond flour, psyllium husk flakes, baking powder, 1 beaten egg, melted butter, and sweetener. Mix thoroughly and keep dough aside.
- Prep your minced meat and allow to cool.
- On a parchment paper, spread out your dough with your hands, you won't need to knead further or roll it out with a rolling pin.
- Scoop the minced meat on to the middle of the spread out dough( be mindful of your quantity), gently lift one end of dough to cover the meat. If you get holes, don't worry, you can patch it up with dough at the other end.

Chicken Moi-Moi
Ingredients:
Chicken Breast
Shrimp (Optional)
1 Egg beaten and 1 Egg boiled
Olive Oil
Salt
Rodo (Hot Pepper)
Adobo seasoning
Moi-Moi Wrap or bowl
Directions
- Chop chicken breast
- Place chicken in blender along with one egg beaten, rodo (hot pepper) and blend till the paste is smooth
- Empty paste in a bowl, add seasoning, olive oil, salt, boiled egg and shrimp
- Mix well, pour portion sizes into moi-moi leaf or you can use heatable bowls
- In a pot, pour a little water, then place moi-moi in leaves (or bowls)
- Steam on stove top on low heat

Pumpkin Custard served with Unsweetened Coconut Milk
-Cut pumpkin into cubes, cook till completely soft
-With very little water blend or mash with a folk till smooth
-Add unsweetened coconut milk and serve
***It is best served hot, another option for unsweetened coconut milk is peanut butter. When your pumpkin is cooked, while still on fire, add a small amount of peanut butter, stir well and serve***
